Culinary art is the art of cooking, decorating and serving food in a professional manner. Culinary skill is as much a science as an art, as one must know the ingredients being used while cooking. It is also important to have a thorough knowledge of the contents of the various ingredients and additives used to cook food. It is vital to have practical hands-on training for the course.
The teaching materials used to impart knowledge of culinary arts can run the entire gamut, from kitchen knives to sophisticated appliances used in modern kitchens. The various cutleries used in setting a table and how they are to be placed also form part of the teaching material. It is important to know about their placements and which fork or knife is to be used for which purpose.
The various types of cuts and chops given to food or cooking material such as fillets, juliennes and shredding are all vital information for a student of the culinary arts. It is equally important to know the combination of spices and ingredients that add flavor to the food. One has to ensure that all the ingredients of a certain recipe are in the right proportion.
Culinary art instructors have their own favorites in the teaching material or aid they use. Some prefer the old traditional method of hands on experience whereas some use the latest teaching aids such as cookery books and computer discs available aplenty in the market. The study materials for culinary teaching include books, sample tests, class notes, and such other items that an instructor puts in front of the class to refer and learn from. There is a wide array of cookery books on the market today. The books dealing with cuisines of different regions such as Chinese, Japanese, French and Indian are very popular and easily available at any bookstore. Reference books provide background information and overviews on any topic related with the culinary arts such as baking, broiling, grilling, carving, food habits of various people, catering, restaurants, menu design, food service and such other topics.
The Internet also provides a plethora of information and teaching material on culinary arts. Many famous cooks, cookery schools and colleges host their own websites and famous recipes and culinary tips are posted there.
Through a combination of classroom and on-the-job training, culinary trainees receive instruction and gain work experience in all aspects of the operations of a restaurant or food service facility in any institution.

Aloo Bhindi – “A gravy recipe made from Potato (Aloo) and Lady’s Finger (Bhindi/Okra)”.
“What shall I make for dinner tonight? If that is a reeling question you are with at the moment, I have a solution for you.”
If you have some left over potatoes and some okra/ladies finger in your fridge, then tonight lets toss them together with some Indian masala’s and make Aloo aur Bhindi ki sabji.
To give you a small introduction, aloo bhindi is a gravy dish where we prepare the gravy and add fried potatoes and lady’s finger into it. The gravy for this dish is a mix of onions, tomatoes and cumin seeds. This dish is prepared in punjabi style, so I have used ghee for frying the vegetables and garam masala for giving the spicy flavor.
First the bhindi/ okra and potatoes needs to be fried separately. This makes sure, that the bhindi’s don’t become soggy and after getting the masalas coated in it, gives a beautiful taste.
Here are the list of ingredients for this recipe. This list serves for 3 people.
• Lady’s Finger – 250 gm
• Potatoes – 2 medium or 1 big
• Tomatoes – 2
• Green chilly – 3
• Garlic – 4-5 slices
• Ginger – 1 slice
• Coriander leaves – ½ cup chopped
• Turmeric Powder – ½ tbsp
• Garam Masala – 1 tbsp
• Coriander Powder – 1 tbsp
• Red Chilly powder – ½ tbsp
• Mango Powder – ¼ tbsp ( Optional)
• Salt – 1 tbsp
• Lemon Juice – 2-3 tbsp
Excited? Let’s get started.
Aloo bhindi – Preparation Steps
1. Dice 2 medium sized potatoes/1 large potatoes and 250 gm of lady’s finger into small pieces.
2. Heat about 2 tbsp of butter or ghee into the pan. As it gets heated, fry the lady’s finger, until its sides turn brown. Repeat the same process for the potatoes. Once, they are fried keep them aside.
3. Dice 1 onion, 3 green chilies, 4-5 garlic florets and 1 big slice of ginger.
4. Heat 2 tbsp of ghee in a pan. As it gets heated, add in 1 tbsp cumin seeds. As the seeds splutter add in the 3 diced green chilies, and crushed ginger and garlic.
5. As the garlic pieces, start turning brown, add in the onions. Add ¼ tbsp of salt to help the onions lose water quicker.
6. As the onions start turning brown, add in ½ tbsp turmeric powder, 1 tbsp coriander powder, ½ tbsp red chilli powder and 1 tbsp of garam masala powder. Stir well.
7. Add in the diced tomatoes and sprinkle a little bit of water and close the lid of the pan. Keep a medium flame as you do so.
8. Once the tomatoes are cooked, the gravy becomes thick. Add water in small batches based on the consistency required.
9. As the oil starts leaving the sides of the pan, and the gravy thickens, add in the fried lady’s finger and potatoes and mix it well. If needed add water and let the ingredients cook in it for about 10 min.
10. As you boil, the masalas get settled and the gravy thickens. At this time, add in ¼ tbsp of mango powder.
11. Switch off the flame. Chop some coriander leaves and garnish on top of this dish. Aloo bhindi recipe is ready to be served.
Aloo Bhindi, is a recipe that will go very well with white rice and roti. My personal favorite is to have it along with rice and curd. Try it out and let me know.

Cooking As A Culinary Art
Culinary arts is the art of cooking. Cooking is a way to prepare food that will be eaten or served to other people.
The culinary arts is comprised of many categories – some of which are tools, methods, combination of spices and ingredients that adds flavor to the food. It normally needs the right measurements, proper selection and accurate combination of ingredients involved to reach desired result.
The diversity of the Culinary arts around the world mirrors many considerations such as:
1. The Dawn Of Fire
The culinary arts, if not always, is associated with fire. The heat generated by fire is oftentimes required to be applied to be able to change the food’s texture, flavor, nutritional contents and even its appearance. Heating is important in the culinary arts because it disinfects the food and makes it softer. The food danger zone is between 4 to 60 degrees Celsius. Within these temperatures, the bacteria found in the found or even those that were transferred to the food can grow at a very alarming rate. Under ideal conditions bacteria can double their population every twenty minutes. Although at a glance, these foods may not appear harmful, when ingested they can be. Many people have the misconception that bacteria will die when we freeze our food or refrigerate them, but this actually does not rid the food of bacteria, merely it slows down their expansion.
Baking is probably the most famous department in the culinary arts. In the culinary arts, baking is the art of cooking food using an oven. The food is cooked through applying dry heat evenly through the oven and onto the food. It is used in producing pastry based goodies such as pies, tarts and cakes. The dry heat in the oven causes the starch to gelatinize and results to the browning or charring of the outside of the food. Some uneducated in the culinary arts might think that the charred part or the brown part is not as tasty as it sounds, but this part is actually what gives taste and flavor to the baked good, partly sealing the moisture of the food. The browning apparent in the baked good is caused by the sugar caramelizing and the chemical reaction that happens between the reduction of sugar and the amino acid (Maillard reaction). Moisture in the baked goody, on the other hand, is not really completely kept in, in time as the goody is being baked it will become drier and drier.
Another category is boiling. Boiling is when there is a rapid vaporization of any liquid when the liquid is heated. In cooking, boiling is divided into many other categories. Blanching, a cooking term used to describe the submersion of food into boiling water and removing it after a certain period of time and then throwing it into cold water or letting water run over it causing the firming of food. Pressure cooking is when food is cooked inside an enclosed cooking tool that would limit the air that’s coming in or going out of that tool – this technique speeds up the pace of cooking. Stewing would probably be the most popular cooking technique in the culinary arts division. It is a method where meats are cut up into smaller pieces and along with some vegetables are simmered into a liquid. Simmering, then again is a cooking method where the liquid is barely kept away from its boiling point. Other boiling techniques are braising, codding, steaming, infusion, poaching, double steaming, steeping and vacuum flask cooking.
To most Americans, microwaving and grilling are the most common forms of cooking. Microwaving is the easiest and simplest form of cooking; it is a technique used mostly to reheat sumptuous meals ready to be consumed. And for grilling, most Americans have a grill station in their backyard. Grilling is a roasting method that is cooking directly under a source of heat. Other roasting methods are Barbecuing, Searing and Rotisserie. A less common method is smoking meat, or even salting it.
